Mountain Man Dutch Oven Breakfast

This is not my recipe...my brother introduced it to us and it's available all over the internet, but now we have to have it on every camping trip!

It makes so much, we always share, and then I always have to give the recipe. Here's the basics of this yummy breakfast - I'll share my tips and variations below.


1 pound mild pork sausage

1 pound bacon

1 package (2 pounds) frozen hash brown potatoes

1 dozen eggs, beaten

16 oz package shredded cheddar cheese

Veggies to your liking (onion, green bell pepper, red bell pepper, green chilies are some of our favorites)


Get your coals/charcoal ready for dutch oven cooking. Cook the sausage and bacon and any veggies in a hot dutch oven until the meat is cooked and brown. Stir in hash brown potatoes until mixed. Cook, stirring occasionally, until heated through. Pour the eggs over the top. Cover the dutch oven and put 10 or so coals underneath and 10 or so on top. Bake around 45 minutes until eggs are firm. Sprinkle with cheese, cover and continue to cook until cheese is melted. We serve with tortillas and salsa and have yummy breakfast burritos.


Tips:



I don't like to do a lot of cooking while out camping, so I precook the sausage and bacon and veggies before we go. I put them in a ziplock bag and freeze them until it's time for our next adventure. The morning we fix this breakfast, I reheat them on the stove top while the hubby gets the coals ready. I stir in the potatoes, heat them up, pour that into the dutch oven, then the eggs and we're cooking! This also cuts down on cooking time which pleases the three hungry boys waiting for breakfast.


Sometimes I'm in the mood for onions and peppers and sometimes not. We just play with the different things we like in our eggs. My brother did it with a can of green chilies once and we loved that too. I'm sure any veggies you typically like in omelets or eggs would work. You can try all kinds of variations...in our latest we substituted chorizo for the sausage and it was yummy!


We line our dutch oven with parchment paper - it makes clean up really easy!


This recipe makes a lot of food. Plan to share it with fellow campers or save the leftovers for a quick heat up on your last day of camping...a quick yummy solution when check-out time looms.
